The traditional method of drying Yerba Mate was with wood placed in a large chimney. More modern methods are used today for most Yerba Mates including a large tube shaped oven to bake the leaves. Some companies such as Rosamonte still use the traditional wood drying method for one or more flavors of their Yerba Mate. It is dried with hard wood. This process imparts a smoked quality to the yerba mate.
